Spring Pasta Primavera
A colorful and flavorful vegetarian pasta dish loaded with spring vegetables.
Ingredients
- ●8 oz pastaspring-shaped or similar
- ●1 large spring onionsthinly sliced
- ●1 medium zesty zucchinisliced into rounds
- ●1 pint croatian cherry tomatoeshalved
- ●2 cloves garlicminced
- ●2 tbsp olive oil
- ●1 cup grated parmesan
- ●1 cup vegetable broth
- ●1/4 cup basilchopped

Bring a large pot of salted water to a boil and cook pasta according to package instructions.

In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.

Add zucchini, spring onions, and cherry tomatoes to the skillet. Cook until vegetables are tender, about 3-4 minutes.

Stir in vegetable broth and bring to a simmer. Reduce heat to low and let sauce cook for 2-3 minutes.

Drain pasta and return it to the pot. Add sauce and toss to combine.

Season with salt and pepper to taste. Serve hot, topped with parmesan and basil.
