Spiced Lentil Koftas
A flavorful and aromatic vegetarian dish inspired by Saudi cuisine. Lentil koftas are perfect for grilling and serve as a great snack or side dish.
Ingredients
- β1 cup dried lentilsoaked overnight
- β1 teaspoon ground aromaticsuch as cumin or coriander
- β1 teaspoon ground arabiansuch as sumac or allspice
- β1 medium chopped onionoptional
- β2 cloves minced garlicoptional
- β1/2 cup finely chopped breadsuch as pita or naan
- β1/2 teaspoon salt
- β1/4 teaspoon pepper

Preheat the grill to medium-high heat.

In a large mixing bowl, combine the soaked lentils, aromatic spices, Arabian spices, chopped onion, minced garlic, chopped bread, salt, and pepper. Mix well with your hands until everything is well combined.

Using your hands, shape the mixture into small patties or logs, about 1 1/2 inches in diameter and 3 inches long. You should end up with around 8-10 koftas.

Brush the koftas with a little oil and place them on the preheated grill.

Cook the koftas for about 4-5 minutes per side, or until they are nicely charred and cooked through.

Remove the koftas from the grill and let them rest for a few minutes before serving.

Serve the koftas hot with your favorite sides, such as a salad or some grilled vegetables.
