Bass Tikka Masala
A classic Indian-inspired dish with sea bass, marinated in spices and yogurt, then grilled and served in a rich tomato-based sauce.

- β1 large onion Sweet Treat (Onion)
- β1 cup YogurtPlain, full-fat yogurt
- β2 tbsp Lemon Juice
- β1 tsp Garam MasalaGround spices
- β1 tsp Cumin PowderGround spices
- β1 tsp Coriander PowderGround spices
- β1/2 tsp Red Chili PowderGround spices
- β1/2 tsp Salt
- β2 cups Tomato PureeCanned or fresh
- β1 cup Heavy Cream
- β1/4 cup Fresh CilantroChopped

Preheat grill to medium-high heat.

In a large bowl, whisk together yogurt, lemon juice, garam masala, cumin powder, coriander powder, red chili powder, and salt.

Add the sea bass fillets to the marinade and mix well. Cover and refrigerate for at least 30 minutes.

Remove the sea bass from the marinade and grill for 4-5 minutes per side, or until cooked through.

In a large saucepan, heat oil over medium heat.

Add the sweet treat (onion) and cook until softened, about 5 minutes.

Add the tomato puree and cook for 2-3 minutes.

Stir in heavy cream and bring to a simmer.

Reduce heat to low and cook for 5-7 minutes, or until sauce has thickened.

To serve, place a grilled sea bass fillet on each plate and spoon the tikka masala sauce over the top.
