Vegan Moroccan Harira Stew
A hearty and flavorful vegan stew inspired by Moroccan cuisine, made with robust vegetables and harira.

Ingredients
- β2 medium-sized robustany robust vegetable will do, such as eggplant or zucchini
- β1 small lightsuch as bell pepper or onion
- β2 tbsp moroccandried or fresh mix of spices, adjust to taste
- β1 tsp saltto taste
- β2 cups hariraor 1 can of harira, drained and rinsed

Instructions

Heat 2 tbsp of oil in a large pot over medium heat.

Add the chopped light and robust vegetables and cook until tender.

Add the moroccan spice mix and salt, stir well.

Add the harira and 2 cups of water, stir well.

Bring to a boil, then reduce heat to low and simmer for 20 minutes.

Serve hot, garnished with fresh herbs if desired.
