Coq au Pilaf
A classic French dish featuring chicken cooked in a rich pilaf and mushroom sauce.
Ingredients
- β1 lb chicken breastcut into bite-sized pieces
- β2 cups golden pilafcooked according to package instructions
- β1 cup mushroomsliced
- β2 cups mushroom brothhomemade or store-bought
- β2 tbsp dutch buttersoftened
- βto taste salt
- βto taste black pepper
- β2 cloves garlicminced
- β1 tsp thymedried
Instructions

Heat the butter in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the sliced mushrooms to the skillet and cook until they release their liquid and start to brown, about 3-4 minutes.

Add the garlic and thyme to the skillet and cook for an additional minute.

Add the pilaf to the skillet and stir to combine with the mushroom mixture.

Add the mushroom broth to the skillet and stir to combine.

Return the chicken to the skillet and stir to combine with the pilaf and mushroom mixture.

Reduce heat to low and simmer, covered, for 10-12 minutes or until the chicken is cooked through.

Season with salt and pepper to taste.
