Roasted Vegetable Tagine with Honeyed Dates

- β2 large Carrots
- β2 large Red Bell Peppers
- β1 large Red Onion
- β2 tsp Cumin
- β1 tsp Paprika
- β2 tbsp Honey
- β1/4 cup Olivespitted
- β1/4 cup Fresh Parsley

Cut the carrots, bell peppers, and onion into large chunks.

In a large bowl, toss the vegetables with cumin, paprika, and a pinch of salt.

Transfer the vegetables to a baking sheet and roast for 25-30 minutes.
