Warak Enab Stuffed with Middle Eastern Spices
A delicious vegan version of traditional stuffed zucchini, featuring the flavors of the Middle East. A great side dish or light meal.
Ingredients
- ●4 Warak EnabMedium-sized zucchinis
- ●1/2 cup Crusty bread, torn into small piecesFor breadcrumbs
- ●1/4 cup Vegan hummusStore-bought or homemade
- ●1/4 cup Minced onionSauteed until softened
- ●2 tbsp Chopped fresh parsleyChopped
- ●to taste Salt and pepperSeason to taste
- ●2 tbsp Olive oilFor brushing the zucchinis

Preheat oven to 375°F (190°C).

Cut the tops off the Warak Enab and scoop out some of the insides to make room for the filling.

In a bowl, mix together the hummus, sautéed onion, and chopped parsley.

Stuff each Warak Enab with the hummus mixture, dividing it evenly among the four zucchinis.

Place the stuffed zucchinis in a baking dish and brush with olive oil.

Bake for 25-30 minutes, or until the zucchinis are tender and the filling is heated through.

Season with salt and pepper to taste.
