Cozy Smoky Chicken Tacos
Moist chicken in a smoky sauce, served in a crispy french baguette with a side of casabe chips. Perfect for a cozy mexican dinner.
Ingredients
- β1.5 pounds chicken breast
- β1/4 cup cozy chipotle peppers in adobo sauce
- β1 cup gratin cheese
- β1 bag casabe chips
- β1 french baguette
- β1 tsp cumin
- β1 tsp coriander
- βto taste salt
- βto taste pepper

Preheat the oven to 375Β°F (190Β°C).

In a large bowl, whisk together cumin, coriander, salt, and pepper.

Add the chicken to the bowl and toss to coat with the spice mixture.

Heat a large skillet over medium-high heat. Add the chicken and cook until browned, about 5 minutes.

Transfer the chicken to the oven and bake for 15-20 minutes, or until cooked through.

While the chicken is baking, prepare the smoky sauce by combining the chipotle peppers and adobo sauce in a blender or food processor.

Spoon the smoky sauce over the chicken and return to the oven for an additional 2-3 minutes.

Meanwhile, toast the french baguette slices in the oven for 2-3 minutes, or until lightly browned.
