Cozy Smoky Chicken Tikka Masala
A comforting and aromatic Indian-inspired dish, with tender chicken in a rich smoky tomato sauce, served over casabe. Perfect for a cozy dinner.
Ingredients
- β1 1/2 pounds chicken breastboneless, skinless
- β2 teaspoons cozy spices blendstore-bought or homemade
- β1 teaspoon smoky paprika
- β1/2 cup gratin cheeseshredded or crumbled
- β2 cups casabecrushed or torn
- β1 medium french onion
- β2 medium tomato
- β2 tablespoons ghee or oil
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Preheat oven to 400Β°F (200Β°C).

Season the chicken with cozy spices blend, smoky paprika, salt, and black pepper.

Heat ghee or oil in a large skillet over medium-high heat. Sear the chicken until browned on both sides, about 5-6 minutes. Transfer to a baking dish.

In the same skillet, add sliced french onion and cook until softened, about 3-4 minutes.

Add diced tomato to the skillet and cook until the mixture is fragrant and slightly caramelized, about 5 minutes.

Pour the tomato mixture over the chicken in the baking dish.

Top with grated gratin cheese and crushed casabe.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and golden brown.
