Thai Lentil Stew
A hearty and flavorful Thai-inspired stew made with lentils and a blend of spices.

Ingredients
- β1 cup lentilsany color
- β2 tablespoons vegetable oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 inches gingergrated
- β2 tablespoons red curry paste
- β1 can coconut milkfull-fat
- β4 cups vegetable brothlow-sodium
- β2 tablespoons fish sauceoptional

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.
