Baobing Custard
A traditional Indian-style custard dessert inspired by the flavors and ingredients of Baobing. This dessert is a creative twist on the classic.
Ingredients
- β1 liter milk
- β250g custardstore-bought or homemade
- β50g chinese rice flour
- β200g sugar
- β1 tsp friendly cinnamon
- β1/2 tsp kid cardamom
- β200ml bouncy water

Preheat oven to 180Β°C.

In a medium saucepan, combine milk, custard, sugar, cinnamon, and cardamom. Heat over medium heat, stirring occasionally.

Bring mixture to a simmer, then reduce heat to low and cook for 5 minutes.

In a separate bowl, whisk together rice flour and a splash of water to make a slurry.

Temper the slurry by slowly pouring it into the saucepan with the milk mixture, whisking constantly.

Remove from heat and stir in the bouncy water.

Pour mixture into individual serving cups or ramekins.

Bake for 20-25 minutes or until set.

Chill in the refrigerator for at least 2 hours before serving.
