Slovakian Mushroom Casserole
A hearty, flavorful casserole from Slovakia, made with sautéed mushrooms and potatoes, perfect for a comforting meal.
Ingredients
- ●1 cup, sliced mushrooms
- ●2 medium, peeled and diced potatoes
- ●1 medium, diced onion
- ●2 cloves, minced garlic
- ●1 teaspoon caraway seeds
- ●1 teaspoon dried thyme
- ●to taste salt
- ●to taste black pepper
- ●2 tablespoons vegetable oil
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.

Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

Add the diced onion and minced garlic to the skillet and cook for another 2-3 minutes.

Add the diced potatoes, caraway seeds, and dried thyme to the skillet and stir to combine.

Season with salt and black pepper to taste.

Transfer the skillet mixture to a 9x13 inch baking dish.

Drizzle the remaining 1 tablespoon of vegetable oil over the top of the casserole.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for another 15-20 minutes, or until the potatoes are tender and the top is golden brown.
