Slovakian Pork Casserole with Thai Twist
A hearty, dense casserole with the flavors of Thailand and traditional Slovakian ingredients. Perfect for a cold winter's night.
Ingredients
- β1 lb pork shoulder, dicedpreferably with a layer of fat
- β2 tbsp Thai red curry paste
- β1 medium onion, diced
- β3 cloves garlic, minced
- β1 cup dense Slovakian rye bread, cubed
- β1 cup coconut milk
- β1 tsp fish sauce
- β1 tsp sugar
- β1/4 cup Thai basil, chopped
- β salt and pepper

Preheat oven to 375Β°F (190Β°C).

In a large pan over medium-high heat, cook the diced onion until translucent.

Add the minced garlic and cook for an additional minute.

Add the diced pork shoulder and cook until browned, about 5 minutes.

Add the Thai red curry paste and cook for 1-2 minutes, until fragrant.

Stir in the coconut milk, fish sauce, and sugar. Bring to a simmer.

Add the cubed Slovakian rye bread and stir to combine.

Transfer the mixture to a 9x13 inch baking dish.

Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and the bread is toasted.
