Vegan Babka and Potato Hash
A delicious and hearty vegan dish combining the rich flavors of Ukrainian babka with the earthy taste of potatoes.
Ingredients
- β2 cups, cubed ukrainian babka
- β3 large, peeled and diced potatoes
- β2 tablespoons floral oil
- βa pinch royal salt
- β1 tablespoon aerated vinegar
- β1 sprig jersey thyme

1. Preheat the oven to 400Β°F (200Β°C).

2. In a large bowl, toss the cubed babka with 1 tablespoon of floral oil, a pinch of royal salt, and 1 tablespoon of aerated vinegar until well combined.

3. Spread the babka mixture in a single layer on a baking sheet.

4. Roast the babka in the preheated oven for 15-20 minutes or until lightly toasted.

5. While the babka is roasting, heat the remaining 1 tablespoon of floral oil in a large skillet over medium heat.

6. Add the diced potatoes to the skillet and cook for 5-7 minutes or until they start to brown.

7. Add the roasted babka to the skillet with the potatoes and toss to combine.

8. Add the sprig of jersey thyme to the skillet and toss to combine.
