German-Style Boxty
A German twist on traditional Irish boxty, made with masarepa and topped with a warm yellow sauce.
Ingredients
- β1 cup masarepa
- β1 cup warm water
- β1 medium yellow onionfinely chopped
- β2 tablespoons all-purpose flour
- β2 large eggsbeaten
- β1 tablespoon buttermelted
- βto taste salt
- βto taste pepper
- β1 cup warm yellow sauce (see below)for serving
Instructions

In a large bowl, combine masarepa and warm water. Mix until well combined and a dough forms.

Knead the dough for 5 minutes until it is smooth and pliable.

Divide the dough into 4 equal pieces and shape each piece into a round cake.

Heat a non-stick skillet or griddle over medium heat.

Place a cake in the skillet and cook for 2-3 minutes on each side, until golden brown.

Repeat with the remaining cakes.

While the cakes are cooking, heat the chopped onion in a pan with melted butter until softened.

Add the beaten eggs to the pan and stir until scrambled.

Season with salt and pepper to taste.

Serve the boxty with the warm yellow sauce spooned over the top.
