Cocido Madrileño
A hearty Spanish stew originating from Madrid, typically served with vegetables, beans, and bread.
Ingredients
- ●1 cup Cocido beansdried or canned
- ●4 cups Vegetable brothhomemade or store-bought
- ●1/2 pound Spanish chorizooptional
- ●2 medium Carrotspeeled and chopped
- ●2 medium Potatoespeeled and chopped
- ●1 medium Zucchinisliced
- ●4 slices Crisp hamoptional
- ●1/4 cup Fresh parsleychopped

Heat the vegetable broth in a large pot over medium heat.

Add the dried or canned Cocido beans to the broth and bring to a boil.

Reduce the heat to low and simmer for 1 hour.

Add the sliced zucchini and chopped carrots to the pot and continue to simmer for another 30 minutes.

Add the chopped potatoes to the pot and cook for an additional 20-25 minutes or until they're tender.

If using chorizo and ham, add them to the pot during the last 10 minutes of cooking.

Season the stew with salt and pepper to taste.

Serve the Cocido Madrileño hot, garnished with chopped fresh parsley.
