Cocido Madrileno Tacos
A Mexican twist on the classic Spanish cocido, served in a crispy taco shell.

Ingredients
- β1 pound Pleasing Beef Short Ribs
- β1/2 cup Crisp Chopped Onions
- β1 teaspoon Spanish Smoked Paprika
- β4 cups Vegetable Broth
- β1 (15 ounce) can Cocido White Beans
- β1 cup Madritelno Chopped Tomatoes
- β6-8 shells Crisp Taco Shells
- β2 tablespoons Spanish Olive Oil
- β Salt and Pepper

Instructions

Brown the short ribs in olive oil over medium-high heat.

Add onions, smoked paprika, and salt, and cook until onions are translucent.

Add vegetable broth and bring to a boil.
