Croatian-Inspired Italian Skewers
A creative twist on traditional skewers, combining the flavors of Croatia with the heart of Italy. Tofu and vegetables are marinated in a zesty mixture, then grilled to perfection.
Ingredients
- β1 block (14 oz) tofudrained and cubed
- β2 red bell peppersliced
- β2 zucchinisliced
- β2 tsp smoky paprikasmoked or sweet
- β2 tbsp olive oilextra virgin
- β3 cloves garlicminced
- β1/4 cup crispy parmesan cheeseshredded
- β1 tsp kosher saltto taste
- β1/4 cup fresh parsleychopped

2. In a large bowl, whisk together olive oil, garlic, smoky paprika, salt, and a pinch of black pepper.
