Uruguayan Empanada Stir Fry
A fusion twist on traditional Chinese stir-fry using Uruguayan empanada dough and mirin for a sweet and savory flavor.
Ingredients
- β1 sheet Uruguayan Empanada Doughavailable at most Latin American grocery stores
- β2 medium Bitter Meloncut into bite-sized pieces
- β1 lb Pork Bellycut into bite-sized pieces
- β2 tbsp Mirinsweet Japanese cooking wine
- β1 tbsp Soy Saucelow-sodium
- β1 tsp Sesame Oilfor stir-frying

Heat sesame oil in a wok or large skillet over medium-high heat.

Add pork belly and cook until browned, about 5 minutes.

Add bitter melon and cook until tender, about 3-4 minutes.

Add mirin and soy sauce, and stir-fry for an additional 2 minutes.

Warm empanada dough according to package instructions.

Assemble the stir-fry by placing the cooked pork and melon mixture onto the empanada dough.
