Uruguayan Beef Empanada with Thai Twist
A fusion dish that combines the flavors of Uruguay with the spices of Thailand. Beef empanadas are filled with a mixture of ground beef, onions, and spices, then served with a sweet and sour mirin sauce.
Ingredients

- β1 medium Onionfinely chopped
- β1 medium Bitter gourdfinely chopped
- β1/2 pound Uruguayan chorizosliced
- β2 tablespoons Mirin
- βto taste Salt
- βto taste Black pepper
- β4-6 pieces Empanada dough

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the chopped onion and bitter gourd to the skillet and cook until the vegetables are softened.

Stir in the sliced chorizo and cook for an additional 2-3 minutes.

In a small bowl, whisk together the mirin and 2 tablespoons of water. Add the mixture to the skillet and stir to combine.

Season the filling with salt and black pepper to taste.

On a lightly floured surface, roll out the empanada dough to a thickness of about 1/8 inch.

Use a cookie cutter or the rim of a glass to cut out circles of dough.

Place a tablespoon of the beef filling in the center of each dough circle.

Fold the dough over the filling to form a half-circle shape, and press the edges together to seal the empanada.

Brush the tops of the empanadas with a little bit of water and sprinkle with salt.

Place the empanadas on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the dough is golden brown.
