Crispy Fennel Stir Fry
A simple Thai-inspired dish featuring crispy fennel and a crunchy fried element. This recipe can be served as a side or as part of a larger meal.
Ingredients

- β2 tablespoons Vegetable Oil
- β1/4 cup Fried Shallots
- β1 small piece Ginger
- β1 small piece Galangal
- β1 small Chili Pepper
- β1 Fried Egg
- β1/4 cup Chopped Cilantro

Heat 2 tablespoons of vegetable oil in a pan over medium-high heat.

Add the fennel bulb and cook until crispy, about 5 minutes.

Add the fried shallots, ginger, galangal, and chili pepper to the pan and cook for an additional 2 minutes.

Push the vegetables to one side of the pan and crack the fried egg into the other side.
