Kenyan-Style Chicken Stew
A fusion of Chinese and Kenyan flavors in this hearty chicken stew. The vibrant spices will transport your taste buds to the markets of Nairobi.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breasts
- β2 tablespoons Vegetable oil
- β1 medium Onion
- β2 inches Ginger
- β3 cloves Garlic
- β2 tablespoons Kenyan-style stew spice blend
- β1 cup Vibrant vegetable mixYour favorite colorful mix of bell peppers, carrots, and snap peas
- β2 cups Chicken broth
- β2 tablespoons Soy sauce
- β1 tablespoon Honey

Heat 1 tablespoon of oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the remaining 1 tablespoon of oil, then sautΓ© the onion, ginger, and garlic until softened, about 5 minutes.

Add the Kenyan-style stew spice blend and cook for 1 minute.

Add the vibrant vegetable mix and cook until slightly tender, about 3-4 minutes.

Add the chicken broth, soy sauce, and honey. Stir to combine.
