Kenyan-Style Chicken Stew
A flavorful and hearty stew made with tender chicken and vibrant spices, inspired by the cuisine of Kenya. This gluten-free version is perfect for a cozy dinner.

- β1 1/2 pounds Chicken breast or thighs
- β1 large Onion
- β3 cloves Garlic
- β2 tablespoons Tomato paste
- β2 teaspoons Vibrant spice mix
- β2 cups Chicken broth
- β2 medium Potatoes
- β2 medium Carrots

1. Heat oil in a large Dutch oven over medium-high heat.

2. Add the chicken and cook until browned, about 5 minutes.
