Cod Stew Niçoise
A hearty and flavorful French-inspired stew made with cod, rustic potatoes, and Norwegian ingredients.
Ingredients
- ●1 1/2 pounds Cod filletsfresh, skin removed
- ●2 medium Rustic potatoespeeled, 1-inch cubes
- ●4 ounces Norwegian smoked salmondiced
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●1 cup White winedry
- ●2 cups Fish stocklow-sodium
- ●2 tablespoons Tomato pastecrushed
- ●1/4 cup Fresh parsleychopped

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the cod fillets and cook until browned, about 2-3 minutes per side.

Remove the cod from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the white wine to the pot and cook until reduced by half, about 2-3 minutes.

Add the fish stock, tomato paste, and smoked salmon to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the rustic potatoes to the pot and cook until they are tender, about 15-20 minutes.

Return the cod fillets to the pot and cook until heated through, about 2-3 minutes.

Season the stew with salt and pepper to taste.
