Crispy Yeast Hake Tacos
A Mexican-inspired recipe featuring crispy fried hake, served with a side of warm tortillas and a sprinkle of yeast-infused spices.

- β4 hake fillets skin removed
- β1 tsp yeastactive dry yeast
- β1 cup all-purpose flourfor dusting
- β2 tsp mexican spices
- β2 eggsbeaten
- β1 cup milkfor the yeast batter
- β1 cup vegetable oilfor frying
- β4 tortillascorn tortillas
- β1 onionsdiced
- β1 tsp cumin

1. In a small bowl, mix yeast with 1/4 cup of warm milk. Let it sit for 5 minutes.

2. In a large bowl, mix flour, mexican spices, and yeast mixture. Gradually add milk and mix until a smooth batter forms.

3. Heat oil in a deep frying pan to 180Β°C.

4. Dip each hake fillet into the yeast batter, then coat with flour, and fry for 3-4 minutes on each side.

5. Drain the fried hake on paper towels.

6. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20 seconds.

7. Assemble the tacos by placing fried hake on a tortilla, topping with onions and a sprinkle of cumin.
