Durian Crème Brûlée
A rich and creamy French dessert featuring the unique flavor of durian, topped with a caramelized sugar crust.
Ingredients

- ●1 1/2 cups Heavy cream
- ●1 cup Granulated sugarDivided
- ●3 Large egg yolks
- ●1 tsp Vanilla extract
- ●1 tsp Cornstarch

Preheat the oven to 300°F (150°C).

In a medium saucepan, whisk together the heavy cream, 1/2 cup granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove the saucepan from the heat and stir in the durian puree and vanilla extract. Let cool slightly.

In a separate bowl, whisk together the egg yolks and the remaining 1/2 cup granulated sugar until pale and thick.

Temper the egg yolks by slowly pouring the warm durian mixture into the egg yolks, whisking constantly.

Pour the mixture into 4-6 ramekins or small baking dishes.

Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.

Bake for 25-30 minutes or until set.

Remove the ramekins from the water bath and let cool to room temperature.

Cover and refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin.

Caramelize the sugar with a kitchen torch or under the broiler.
