Hash and Yautia Hashbrowns
A vegetarian twist on a classic dish, using yautia and hash to create crispy hashbrowns.
Ingredients
- β2 large yautiapeeled and grated
- β1 cup hashdiced
- β1 medium oniondiced
- β3 cloves garlicminced
- β1 egg
- βto taste salt
- βto taste black pepper
- β2 tablespoons olive oil

Preheat oven to 400Β°F (200Β°C).

In a large bowl, combine grated yautia, diced hash, onion, garlic, egg, salt, and black pepper.

Mix well to combine.

Heat olive oil in a large skillet over medium-high heat.

Using a 1/4 cup measuring cup, scoop the yautia mixture into the skillet.

Press the mixture down to form a flat shape.

Cook for 4-5 minutes, or until the bottom is golden brown.

Flip the hashbrowns over and cook for an additional 4-5 minutes, or until the other side is golden brown.

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until crispy.
