Turkish Aubergine Dolma
A flavorful and healthy Turkish-inspired dish with aubergine dolma. Serve as a side or light meal.
Ingredients
- β2 large aubergine
- β1 cup turkish rice
- β1 medium onion
- β3 cloves garlic
- β2 tbsp tomato paste
- β2 tbsp olive oil
- β1 cup, chopped dolma
- βto taste salt
- βto taste black pepper

Preheat oven to 375Β°F (190Β°C).

Cut the aubergine in half lengthwise and scoop out the seeds.

In a pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened.

Add the garlic, tomato paste, and chopped dolma. Cook for 2-3 minutes.

Stuff each aubergine half with the rice mixture and season with salt and black pepper.

Place the stuffed aubergine in a baking dish and cover with foil.

Bake for 30 minutes, then remove the foil and continue baking for an additional 15 minutes.
