Sweet Japanese Salmon Soup
A delicious and comforting Japanese-inspired soup featuring sweet salmon and creamy coconut milk.
Ingredients
- β4 oz Salmon fillet
- β1 can (14 oz) Coconut milkfull-fat
- β2 medium Sweet potatoesdiced
- β2 medium Carrotsdiced
- β1 bunch Green onionschopped
- β2 tbsp Sesame oilfor cooking
- β2 tbsp Soy saucefor flavor
- β1 tsp Sesame seedsfor garnish
- β1 tsp Vietnamese fish sauce (optional)for added depth

Heat sesame oil in a large pot over medium-high heat.

Add the salmon fillet and sear until cooked through, about 3-4 minutes per side. Set aside.

In the same pot, add diced sweet potatoes and carrots. Cook until tender, about 5-7 minutes.

Pour in coconut milk and bring to a simmer.

Add soy sauce and sesame seeds. Stir to combine.

Return the cooked salmon to the pot and simmer for an additional 2-3 minutes.

Taste and adjust seasoning as needed.
