Sweet and Sour Salmon
A simple Chinese-inspired dish with salmon, sweet and sour flavors, and a crispy texture.
Ingredients
- β4 fillets salmon fillet6 oz each
- β2 tbsp vinegarsweet and sour
- β1 tsp sugarsweet and sour
- β2 tbsp soy saucechinese
- β2 tbsp cornstarchthickener
- β1/4 cup vegetable oilfrying
- β1 medium onionchopped
- β1 large bell pepperchopped
- β2 tbsp sweet chili saucesweet and sour

Preheat the oven to 400Β°F (200Β°C).

Season the salmon fillets with salt and pepper.

In a shallow dish, mix together the cornstarch and a pinch of salt.

Dip each salmon fillet into the cornstarch mixture, coating both sides evenly.

Heat the vegetable oil in a large skillet over medium-high heat.

Add the coated salmon fillets to the skillet and sear for 2-3 minutes on each side, until golden brown.

Transfer the skillet to the preheated oven and bake for 8-10 minutes, until the salmon is cooked through.

Meanwhile, heat the sweet chili sauce and soy sauce in a small saucepan over medium heat.

Add the chopped onion and bell pepper to the saucepan and cook until softened, about 3-4 minutes.

Stir in the vinegar and sugar, and bring the mixture to a simmer.

Reduce the heat to low and cook for an additional 2-3 minutes, until the sauce has thickened slightly.
