Thai Lentil Stew
A flavorful and spicy Thai-inspired stew made with red lentils, aromatic spices, and smoky undertones.
Ingredients
- β250g red lentils
- β1 tsp aromaticground cumin and coriander
- β1 tsp smokysmoked paprika
- β1 medium onion
- β2 inches gingergrated
- β3 cloves garlicminced
- β2 tbsp vegetable oil
- β1 tsp tomato paste
- β1 tsp greekdried oregano
- β1 liter stewvegetable broth

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add ginger and garlic and cook for another minute.

Add lentils, tomato paste, aromatic spices, smoky spices, and Greek herbs.

Stir to combine and cook for 1 minute.

Add stew and bring to a boil.

Reduce heat to low and simmer for 20-25 minutes, or until lentils are tender.
