Argentinian Autumn Apple Empanadas
A vegan twist on traditional Argentinean empanadas, filled with the sweetness of autumnal apples.
Ingredients
- β1 package empanada doughhomemade or store-bought
- β2 medium appleany mix of autumnal apples (granny smith, honeycrisp)
- β2 tbsp maple syrupadjust to taste
- β1 tsp cinnamonadjust to taste
- β1/4 tsp nutmegadjust to taste
- β1/4 cup vegan buttermelted

Preheat oven to 375Β°F (190Β°C).

Roll out empanada dough to about 1/8-inch thickness.

In a bowl, mix together sliced apples, maple syrup, cinnamon, and nutmeg.

Place about 1 tablespoon of the apple mixture onto one half of the dough circle.

Brush edges with melted vegan butter.

Fold dough in half to form a half-circle and press edges to seal.

Use a fork to crimp edges and create a decorative border.

Repeat with remaining dough and filling.
