Hearty Irish Stew
A comforting and flavorful stew made with tender beef, potatoes, and vegetables. Serve with a side of crusty bread for a satisfying meal.
Ingredients
- β1 cup zesty split peas
- β2 pounds irish stew beef (cut into 1-inch cubes)preferably chuck or round
- β2 medium carrots (peeled and chopped)
- β2 large potatoes (peeled and chopped)
- β1 medium onion (chopped)
- β2 stalks celery (chopped)
- β2 teaspoons irish stew seasoning
- β4 cups water

Heat oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside. Add the chopped onion, carrots, and celery to the pot and cook until the vegetables are tender, about 10 minutes.

Add the garlic, thyme, and irish stew seasoning to the pot and cook for 1 minute.

Add the browned beef back to the pot along with the split peas, potatoes, and water.

Bring the stew to a boil, then cover the pot and transfer it to the oven.

Bake the stew for 2 1/2 hours, or until the beef and vegetables are tender.
