Vietnamese Beef Pho
A flavorful and comforting Vietnamese noodle soup made with tender beef and a rich broth.
Ingredients
- β4-6 Beef bonespreferably oxtail or beef neck bones
- β1 pound Beef brisket or chuckthinly sliced
- β2 inches Gingersliced
- β1 large Onionsliced
- β2 Star anisewhole
- β2 Cinnamon stickswhole
- β2 tablespoons Fish sauceoptional
- β2 tablespoons Soy sauceoptional
- β4 cups Beef brothpreferably homemade or low-sodium store-bought
- β1 pound Rice noodlespreferably fresh

Simmer the beef bones in a large stockpot over medium heat for 10 minutes.

Add the sliced ginger and onion to the pot and continue simmering for another 10 minutes.

Add the star anise, cinnamon sticks, fish sauce, and soy sauce (if using) to the pot.

Pour in the beef broth and bring the mixture to a boil.

Reduce the heat to low and simmer for 1-2 hours, or until the broth is rich and flavorful.

While the broth is cooking, slice the beef brisket or chuck into thin strips.

Cook the rice noodles according to the package instructions.

To assemble the pho, place a portion of noodles into a bowl, then add slices of beef and a ladle of hot broth.
