Gluten-Free Vietnamese Beef Pho
A gluten-free version of the classic Vietnamese noodle soup, pho, made with beef broth and topped with fresh herbs.
Ingredients
- β2 lbs beef bones
- β1 lb beef brisket
- β1 package rice noodles
- β1 medium onion
- β2 inches ginger
- β2 tbsp fish sauce
- β1 tbsp soy sauce
- β1 tsp sugar
- β2 whole star anise
- β1 whole cinnamon stick

In a large stockpot, combine beef bones, onion, ginger, fish sauce, soy sauce, sugar, star anise, and cinnamon stick.

Pour in 4 cups of water and bring to a boil over high heat.

Reduce heat to low and simmer for 1 hour.

Add beef brisket to the stockpot and cook for an additional 30 minutes.

Remove beef from the stockpot and slice into thin strips.

Cook rice noodles according to package instructions.
