Patatas Bravas
A classic Spanish tapas dish, Patatas Bravas consists of crispy fried potatoes in a spicy tomato sauce.
Ingredients
- β4-6 medium-sized potatoes patatas
- β1/2 cup olive oilfor frying
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 cups tomatodiced
- β1/4 cup spicy saucesuch as sriracha
- βto taste salt
- β1 teaspoon sugarbalances acidity
- β1 teaspoon ground cumin

Heat the olive oil in a large pan over medium-high heat.

Add the diced onion and cook until translucent.

Add the minced garlic and cook for another minute.

Add the diced tomato and cook until the tomatoes start to break down.

Add the spicy sauce, salt, sugar, and ground cumin. Stir well.

Meanwhile, peel the potatoes and cut them into 1-inch cubes.

Heat about 1/2 inch of olive oil in a separate pan over medium-high heat.

Fry the potato cubes until they're golden brown and crispy.

Drain the potatoes on paper towels and add them to the tomato sauce.

Toss the potatoes in the sauce until they're well coated.
