Earthy Japanese Udon Noodle Soup
A hearty and comforting Japanese-inspired noodle soup made with udon noodles, earthy mushrooms, and vibrant vegetables.
Ingredients
- β8 oz udon noodles
- β1 cup mushrooms (shiitake or cremini)
- β1/4 cup green onions
- β2 tbsp soy sauce (or tamari)
- β2 tbsp sake (or dry white wine)
- β4 cups vegetable broth
- β1 tsp sesame oil
- β1 tsp sugar
- β1 tsp sesame seeds
- β1 green chili pepper

Bring the vegetable broth to a boil in a large pot.

Add the soy sauce, sake, sugar, and sesame oil to the pot.

Add the sliced mushrooms to the pot and cook for 3-4 minutes, or until they release their liquid and start to brown.

Add the udon noodles to the pot and cook for 8-10 minutes, or until they are tender.

Stir in the sesame seeds and green chili pepper.
