Earthly Udon Pasta
A hearty Italian-inspired udon pasta dish featuring earthy undertones and a hint of Japanese flair.
Ingredients
- β8 oz Udon noodlesJapanese udon noodles
- β1 cup MushroomsVibrant earthy variety
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 tbsp Tomato pasteCanned
- β1/4 cup White wineDry
- β1/2 cup Parmesan cheeseShaved
- β2 tbsp Olive oilExtra virgin
- β1 sprig ThymeFresh
- β1 tsp SaltTo taste
- β1/2 tsp Black pepperTo taste
Instructions

Bring a large pot of salted water to a boil and cook udon noodles according to package instructions.

In a large skillet, heat olive oil over medium heat. Add onion and garlic and sautΓ© until softened.

Add mushrooms to the skillet and cook until browned.

Add tomato paste and cook for 1-2 minutes, stirring constantly.

Add white wine and cook until reduced by half.

Add thyme and cook for 1 minute.

Stir in parmesan cheese until melted.

Add cooked udon noodles to the skillet and toss with sauce.

Season with salt and black pepper to taste.
