Vibrant Argentinian Tofu Bake
A flavorful and colorful vegetarian dish that combines the flavors of Argentina with the convenience of a tofu bake. Perfect for a weeknight dinner.
Ingredients
- β1 block (14 oz) firm tofudrained and cubed
- β2 medium vibrant bell peppersany color
- β1/4 cup argentinian chimichurri sauce
- β1/4 cup fresh oreganochopped
- β1 medium red onionthinly sliced
- β3 cloves garlicminced
- βto taste salt
- βto taste black pepper

Preheat oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper.

In a large bowl, whisk together chimichurri sauce, oregano, salt, and black pepper.

Add the cubed tofu and toss to coat with the sauce.

Add the sliced bell peppers, red onion, and garlic to the bowl and toss to combine.
