Argentinian Vibrant Tofu Bake
A fusion of Argentine flavors with a vibrant twist using vibrant vegetables. This dish is perfect for a quick and easy dinner.
Ingredients
- β1 block (14 oz) tofudrained and cut into cubes
- β2 cups ( mixed bell peppers, carrots, zucchini) vibrantsliced
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tbsp olive oilfor baking
- β1 tsp Argentinian seasoning blendsuch as paprika, oregano, and cumin
- βto taste saltoptional
- β2 large bake potatoeswashed and pierced with a fork

Preheat oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper.

Place tofu cubes on the baking sheet, drizzle with 1 tbsp of olive oil, and sprinkle with Argentinian seasoning blend.

Toss the vibrant vegetables, onion, and garlic with the remaining 1 tbsp of olive oil on a separate baking sheet.

Season with salt to taste.

Bake the tofu and vegetables for 25-30 minutes, or until the tofu is golden brown and the vegetables are tender.

Meanwhile, bake the potatoes for 45-50 minutes, or until they are cooked through.
