Vegan Pulled Pork Casserole
A vegan casserole inspired by the flavors of pulled pork, made with tender jackfruit and a tangy BBQ sauce.
Ingredients
- β1 (14 oz) can Jackfruit
- β1 cup Mushrooms
- β1 medium Onion
- β3 cloves Garlic
- β1 cup Barbecue SauceMake sure to choose a vegan-friendly BBQ sauce
- β1 tsp Chili Powder
- β1 tsp Smoked Paprika
- β2 tsp Brown Sugar
- β2 tbsp Tomato Paste
- β1 tbsp Vegan Worcestershire Sauce
- β1 cup Vegan Mozzarella Shreds
- β1 cup Vegan BBQ Ribs Crumbles

Preheat oven to 400Β°F (200Β°C).

In a large skillet, heat 2 tablespoons of oil over medium heat. Add the mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes.

Add the jackfruit, chili powder, smoked paprika, brown sugar, tomato paste, and Worcestershire sauce to the skillet. Cook for 2-3 minutes, stirring constantly.

Transfer the jackfruit mixture to a 9x13 inch baking dish. Top with vegan mozzarella shreds and vegan BBQ ribs crumbles.

Pour the barbecue sauce over the top of the casserole and spread it evenly.

Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
