Vegan Tagine with Chicken Substitute
A hearty and flavorful vegan tagine dish, using a chicken substitute for a meatless alternative.
Ingredients
- β2 tsp unique, savory, tagine spice blend
- β1 lb chicken substitute (such as seitan)cut into bite-sized pieces
- β1 large onionchopped
- β4 medium carrotspeeled and chopped
- β2 medium zucchinichopped
- β1 large red bell pepperchopped
- β1 can (14.5 oz) canned diced tomatoes
- β2 tbsp olive oil
- β2 tbsp apple cider vinegar

Heat the olive oil in the bottom of a large tagine or Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the chicken substitute and cook until browned, about 5 minutes.

Add the chopped carrots, zucchini, and red bell pepper, and cook until the vegetables are tender, about 10 minutes.

Stir in the canned diced tomatoes, tagine spice blend, and apple cider vinegar.

Bring the mixture to a simmer, then reduce the heat to low and cook, covered, for 20 minutes.

Season with salt and pepper to taste.
