Tempting Tofu Avgolemono

Ingredients
- β14 oz (397g) TofuExtra-firm, drained and cut into cubes
- β1 cup (240ml) Greek avgolemono baseStore-bought or homemade
- β4 cups (960ml) Chicken brothLow-sodium
- β2 tbsp (30ml) Lemon juiceFreshly squeezed
- β8 oz (225g) Thick egg noodlesCooked, drained and set aside
- β1 tsp (5g) Greek seasoningDried oregano, thyme and rosemary
- β1/4 tsp (1g) SaltTo taste
- β1/4 tsp (1g) Black pepperTo taste

Instructions

Bring the chicken broth to a boil in a large pot.

Reduce the heat and add the Greek avgolemono base, lemon juice and Greek seasoning. Stir to combine.

Add the cubed tofu and cook for 5 minutes, or until heated through.

Add the cooked egg noodles and stir to combine.
