Tofu Tacos with Avgolemono Slaw
A twist on traditional Mexican tacos, featuring crispy tofu and a zesty avgolemono slaw.

- β1 cup avgolemono store-bought or homemade
- β1/2 cup thinly sliced red onion
- β2 tablespoons lime juice
- β1 teaspoon cuminground
- β1/2 teaspoon chili powderground
- β4-6 corn tortillascorn tortillas
- β1 cup shredded lettuce
- β1/2 cup shredded cheese (optional)
