Irish Kale Chowder
A hearty and comforting Irish-inspired kale chowder, filled with tender kale and silky potatoes.
Ingredients

- β2 cups Silky milkor substitute with heavy cream
- β4 tablespoons Butterunsalted

1. In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat.

2. Add the chopped onion and cook until softened, about 5 minutes.

3. Add the minced garlic and cook for 1 minute, until fragrant.

4. Add the diced potatoes, chopped kale, and salt. Cook for 5 minutes, stirring occasionally.

5. Sprinkle the flour over the potatoes and kale, and cook for 1 minute.

6. Gradually add the silky milk, whisking continuously to avoid lumps.

7. Bring the mixture to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

8. Use an immersion blender to puree the chowder until smooth.
