Roast Chicken with Dutch Potatoes
A simple and flavorful roast chicken dish served with rustic Dutch potatoes. This recipe is perfect for a gluten-free meal.
Ingredients
- ●1 whole chicken (3-4 lbs) chicken
- ●2-3 large rustic potatoes potatoes
- ●2 tbsp olive oil roast
- ●1 tsp salt
- ●1 tsp pepper
- ●1 tsp garlic powder
- ●1 tsp dried thyme
- ●2 tbsp lemon juice
- ●1 cup water

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the olive oil, salt, pepper, garlic powder, and thyme.

Rub the mixture all over the chicken, making sure to get some under the skin as well.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).

While the chicken is roasting, peel the potatoes and cut them into large chunks.

Place the potatoes in a large bowl and drizzle with the olive oil, salt, and pepper.

Toss the potatoes to coat them evenly with the oil and seasonings.

After the chicken has roasted for 30 minutes, add the potatoes to the oven and continue roasting for another 20-25 minutes, or until they are golden brown.
