Crispy Roast Chicken with Rustic Dutch Potatoes
A classic Chinese-inspired dish featuring a crispy roast chicken served with rustic Dutch potatoes.
Ingredients

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the soy sauce, five-spice powder, and 1 tablespoon of the roast.

Rub the mixture all over the chicken, making sure it's evenly coated.

Heat the remaining 1 tablespoon of roast in a large oven-safe skillet over medium-high heat.

Sear the chicken until it's golden brown on all sides, about 5-7 minutes.

Transfer the skillet to the preheated oven and roast the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (74°C).

While the chicken is roasting, peel the potatoes and cut them into 1-inch wedges.

Toss the potatoes with the remaining 1 tablespoon of roast, salt, and black pepper on a baking sheet.
