Classic Italian Paella
A traditional Italian paella dish filled with Mediterranean flavors, perfect for a weekend dinner.
Ingredients
- β1 cup Paella riceshort-grain rice is best for paella
- β2 cups Vegetable brothhomemade or store-bought
- β2 tablespoons Olive oiluse high-quality extra-virgin olive oil
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 cup Mediterranean vegetablessuch as bell peppers, zucchini, and cherry tomatoes
- β2 Roasted red peppersdiced
- β1 cup Teque cheeseshredded, or substitute with mozzarella
- β1/4 cup Fresh parsleychopped, for garnish

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the Mediterranean vegetables and cook until they start to soften, about 5 minutes.

Add the vegetable broth and bring to a boil.

Add the paella rice and stir to coat with the broth.

Add the diced roasted red peppers and stir to combine.

Reduce the heat to low and simmer, covered, for 20 minutes.

Remove the pan from the heat and top with the shredded Teque cheese.

Cover the pan with a clean kitchen towel and let it rest for 5 minutes.
