Tofu Tagine
A North African-inspired dish that combines the flavors of quietly-spiced tofu with the umami taste of Chinese fermented bean paste. This tagine is a hearty and comforting meal.
Ingredients
- β1 block (14 oz) tofu
- β2 tsp Chinese fermented bean paste (doubanjiang)
- β2 tbsp quietly-spiced oil (e.g. ras el hanout)
- β1 medium onion
- β3 cloves garlic
- β1 tsp cuminground
- β1 tsp corianderground
- β1/4 tsp cayenne pepper
- β2 cups chicken broth
- β1 tsp tagine spice blend

Heat the quietly-spiced oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional minute.

Add the cumin, coriander, and cayenne pepper. Cook for 1 minute.

Add the tofu and cook until golden brown on all sides, about 5-7 minutes.

Add the Chinese fermented bean paste, chicken broth, and tagine spice blend. Stir to combine.

Bring the mixture to a simmer.

Reduce heat to low and cook, covered, for 20-25 minutes or until the tofu is coated in the sauce.

Season with salt and pepper to taste.
