Ceviche Italiano
A refreshing and light Italian-inspired dish featuring raw squid marinated in citrus juices.

Ingredients
- β1 lb squidfresh and cleaned
- β1/2 cup lemon juice
- β2 tbsp olive oil
- β2 cloves garlicminced
- β1/4 cup fresh parsleychopped
- βto taste salt
- βto taste black pepper
- β2 tbsp capers
- β1/2 cup red onionthinly sliced

Instructions

Rinse the squid under cold water, then pat it dry with paper towels.

Cut the squid into small pieces and place them in a large bowl.

In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and black pepper.

Pour the marinade over the squid and toss to coat.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Just before serving, stir in chopped parsley, capers, and red onion.
